* Exported from MasterCook * Flower Drum Rice Recipe By :Donna McCrory Serving Size : 4 Preparation Time :0:00 Categories : Broadway FoodMover Main Dishes Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces chicken breast halves -- boneless, skinless 1 pound snow pea pods, fresh 8 ounces waterchestnuts, canned -- sliced 4 cloves garlic -- crushed 1/2 teaspoon ground ginger 2 cups low sodium chicken broth 1/2 cup honey 2 tablespoons cornstarch 1 medium lime 2 tablespoons soy sauce, low sodium 2 cups cooked rice 1/2 cup carrots -- shredded 1/2 cup red pepper -- chopped 2 scallions -- sliced 1 pinch dry mustard non-stick cooking spray Cut chi ken into bite-sized pieces. Spray pan with non-stick cooking spray. Lightly brown chicken pieces in skillet, approximately 5 minutes. Add chicken broth, snow peapods, and water chestnuts. Cover and simmer until chicken is cooked through, approximately 10 minutes. Stir occasionally. While chicken is cooking, in a bowl combine honey, 2 tablespoons grated lime peel, juice from lime, garlic, ginger, dry mustard, and cornstarch. Whisk together until well mixed. When chicken is cooked through, pour honey mixture over chicken into skillet. Cook, stirring constantly, until thickened. Cook rice with carrots and peppers. Divide chicekn over rice. Garnish with sliced scallions.
