* Exported from MasterCook * Pineapple-Ginger Chicken Stir Fry Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Poultry Richard Simmons & Friends Newsletter Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons vegetable oil 1 pound boneless chicken -- cut into 1-inch pieces 2 cups pineapple chunks in juice -- fresh or 20-ounce canned, drained 3 tablespoons molasses 2 tablespoons lime juice 1/4 teaspoon red pepper flakes 8 scallions -- cut into 2" pieces crosswise 1/4 cup crystallized ginger -- minced In a large non-stick skillet over high heat, heat the oil and saute chicken until well-browned, about 6 minutes, then remove chicken and set aside. Add the pineapple and molasses to the pan and stir-fry about 3 minutes. Then add the lime juice, red pepper flakes, scallions, and the chicken. Saute until the scallions are crisp and the chicken is cooked through, about 5 minutes. Stir in the ginger just before serving.
