Coat a baking sheet with the non stick cooking spray. In a medium bowl, mix all of the ingredients except the breadcrumbs until blended. Form the salmon mixture into 8 patties, each about 3/4" thickness. Spread the breadcrumbs on a sheet of waxed paper, and coat the patties with them. Place the patties on the baking sheet and bake for 10 - 12 minutes, turning once, until golden on both sides.
