* Exported from MasterCook * Southeast Asian Chicken Loaf Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Low-Cal Poultry Richsimmons&Friends Newsletter Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- non-stick cooking spray 1 1/2 pounds ground chicken 3 cloes garlic -- minced 1 cup bread crumbs -- plain, dried 1 large egg 1/2 medium red bell pepper -- finely diced 1/2 medium green bell pepper -- finely diced 2 tablespoons hoisin sauce 1 tablespoon fresh ginger -- grated 1 tablespoon lime juice 1 tablespoon teriyaki sauce -- low sodium type 2 tablespoons dried basil 1/2 teaspoon ground black pepper 1. Heat the oven to 350 degrees F. 2. Coat a 9" x 5" loaf pan with the cooking spray. 3. In a large bowl, mix all the ingredients with your hands until well blended. 4. Pack the mixture into the loaf pan. 5. Bake for 1 hour, or until cooked through. 6. Remove from the oven and let it sit for 5 minutes. 7. Invert onto a cutting board and cut into 6 equal slices. 8. Serve drizzled with extra hoisin or teriyaki sauce, if desired.
