* Exported from MasterCook * Two Singular Sensations Veggie Pizza Recipe By :Andrea Beck Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12 inch prepared pizza crust 4 small garlic cloves -- freshly pressed 1 teaspoon Italian seasoning 1 small red onion -- sliced 1 small zucchini -- sliced 1 cup fresh mushrooms -- sliced 2 tablespoons freshly grated Parmesan cheese 1/2 cup colby-jack cheese -- grated non-stick cooking spray Place the pizza crust on a pizza pan. Sprinkle the crust with the Colby-jack cheese. Spray the skillet with non-fat cooking spray. Heat and sauté the vegetables, garlic, and Italian seasoning for 5 minutes. Do not overcook them. Pour the vegetable mixture over the pizza crust and top with the Parmesan cheese. Bake for 8-10 minutes. Serve immediately.
