* Exported from MasterCook * South Pacific Chicken Recipe By :Chad Calaway Serving Size : 4 Preparation Time :0:00 Categories : Broadway FoodMover Main Dishes Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups low sodium chicken broth 1 tablespoon olive oil 1 medium onion -- chopped 1 clove garlic -- chopped 1 medium mango -- peeled and chopped 2 tablespoons brown sugar 1/2 cup white wine -- Don't worry - you won't get tipsy in the South Pacific 1 tablespoon olive oil 4 boneless chicken -- skinless breasts Spice Rub 2 teaspoons cinnamon 2 teaspoons chili powder 2 teaspoons ground ginger 1 teaspoon ground cloves 2 teaspoons garlic powder 1 teaspoon ground allspice 2 teaspoons brown sugar 1 teaspoon kosher salt 2 teaspoons black pepper 1 teaspoon red or cayenne pepper Preheat oven to 350°. Put chicken broth in a saucepan over medium high heat, and reduce by half. In separate skillet heat the olive oil and sweat the onion until soft, approximately 20 minutes. Add the brown sugar, stock, salt and pepper, mango, mix well. Cook until mango is soft, approximately 20 minutes. Place the mixture in a blender and puree until smooth. Strain mixture back into saucepan, and cook for 10-12 minutes until reduced and thickened. While cooking mango mixture, mix all spices together in a bowl. Brush each side of chicken with olive oil, and coat with the spices.Place in a hot, ovenproof sauté pan, and sear on each side. Pour in 1/2 cup of wine to deglaze pan, cover with foil, and place in oven for 25-30 minutes, until done. Place 1 piece of chicken on each plate, and pour mango sauce on each piece.
