* Exported from MasterCook * Wondrous Stuffed Potato Recipe By :Kim Bowen Serving Size : 4 Preparation Time :0:00 Categories : Main Dish Microwave Potatoes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large baking potatoes 1/2 cup chopped broccoli 1/2 tablespoon butter -- reduced fat 1 medium sweet onion -- chopped 1 clove garlic -- chopped 1/2 cup fat free Ranch dressing 1/4 cup shredded cheddar cheese -- fat free fresh parsley sprigs black pepper -- to taste 1. Wrap potatoes in cellophane and microwave for 10 minutes. Unwrap and bake in 375º F oven for an additional 15 minutes until tender when pierced with a fork. 2. Remove from oven and cut in half; carefully scoop out all the potato, leaving the skin intact. 3. In a skillet, sauté onion and garlic in light butter until softened and lightly brown. 4. In a large bowl, combine the potato filling, onion and garlic, black pepper, dressing, and broccoli. Mix well. 5. Fill the potato skins with the mixture and sprinkle tops with cheese. 6. Bake an additional 15 minutes until heated through and cheese is melted.
