MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Cheesecake with a New York City Accent Categories: Dam, Ftf, Low-cal, Cakes Yield: 10 Servings 3 Packages (8oz) fat free ;Cream cheese 3/4 c Sugar 1 1/2 ts Vanilla extract 3/4 c Egg substitute; liquid 1/2 ts Lemon zest; grated 1 1/2 ts Lemon juice 1/3 c Graham cracker crumbs;lo fat ;about 4 whole crackers Mixed fresh berries;garnish Prep: 10 minutes Bake: 325F for 45 minutes Chill: 3 hours 1) Preheat oven to 325F. In large mixing bowl, using an electric mixer, beat together cream cheese, sugar, vanilla until well blended. Add egg substitute, lemon zest, and lemon juice. Beat just enough to blend, no more. 2) Coat base of an 8 inch springform pan or 9 inch pie plate with cooking spray. Add graham cracker crumbs and shake pan so crumbs cling to the bottom and sides. Shake excess crumbs into a small bowl. Pour cream cheese mixture into prepared pan. Dust top lightly with some of the remaining crumbs. 3) Bake 45 minutes or until center is almost set. (If done in pie plate, cake will rise and fall, with some cracking around the outside edge-this is fine.) Transfer pan or plate to a wire rack. Coll. Refirgerate at least 3 hours before serving. Garnish with mixed berries, if desired.
