* Exported from MasterCook * Puff the Magic Meal Recipe By :Richard Simmons Serving Size : 6 Preparation Time :0:10 Categories : Cheese/Eggs Farewell To Fat Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- non-stick cooking spray 1 cup onion -- finely chopped 1 teaspoon garlic -- freshly ground 2 cups Japanese eggplant -- unpeeled, cut in quarters lengthwise, then cut crosswise to form chunks 1 pound lean ground turkey 1 teaspoon dried basil 1/2 teaspoon oregano 1/2 teaspoon cinnamon 1/2 teaspoon salt 1/4 teaspoon fresh ground black pepper 8 ounces tomato sauce 1 tablespoon butter Yorkshire Pudding 2 large eggs 1 cup skim milk 1 cup flour 1/4 teaspoon salt 1/4 cup reduced fat cheddar cheese 2 tablespoons parmesan cheese Coat large non-stick skillet with spray. Heat over medium-high het. Add onion, garlic, and eggplant. Cook, stirring constantly, 5-7 minutes or until onion is softened and eggplant is golden brown. Remove vegetables from skillet and set aside. Recoat skillet with spray. Heat over medium-high heat. Add turkey. Cook, stirring constantly, until no loner pink, 3 minutes. Add basil, oregano, cinnamon, salt, and pepper. Stir in tomato sauce and reserved eggplant mixture. Bring to a boil. Reduce heat and simmer, covered, 20 minutes, stirring ocasionally. Preheat oven to 425º. Place butter in 10 inch pie plate. Place in oven until butter is melted. Yorkshire Pudding: In medium bowl, beat eggs slightly. Add milk. Beat until well blended. Add flour and salt. Beat until batter is smooth. Pour batter into the heated pie plate. Place turkey mixture in middle of batter. Spread out to within 1 inch of edge. Sprinkle with chedar and Parmesan cheeses. Bake 30 minutes or until brown and puffy. Cut into wedges and serve.
