* Exported from MasterCook * Leaning Torta of Turkey Recipe By : Serving Size : 6 Preparation Time :0:15 Categories : Farewell To Fat Cookbook Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces ground turkey 1 clove garlic -- minced 1/2 teaspoon salt free Mexican seasoning Green Sauce 1/4 cup onion -- diced 1/4 cup fresh cilantro -- chopped 7 ounces tomatillo sauce 1 pinch salt 15 ounces canned black beans -- drained and rinsed 10 ounces enchilada sauce -- mild 5 corn tortillas -- 5-6" wide 1/2 cup salsa 3 ounces monterey jack cheese -- reduced fat variety fresh cilantro sprigs -- for garnish Preheat oven to 350ºF. Line a 9" pie plate with foil. Heat non-stick skillet over medium-high heat. Add ground turkey, garlic, and Mexican seasonings. Cook, stirring, until turkey is browned and crumbly, 4-5 minutes. Drain off any fat. Set turkey aside. Green Sauce: In blender or small food processor combine onion, cilantro, tomatillo sauce, and salt. Process until smooth. Scrape into a small bowl. Rinse out blender or procesor container, puree beans. Assemble torta: In a medium saucepan, warm enchilada sauce. Dip tortilla quickly in and out of sauce. Place 1 tortilla in prepared pie plate. Layer with one quarter *each* of pureed beans, turkey mixture, green sauce, red salsa, and cheese. Repeat 3 more layers, reserving a sprinkling of cheese. End with a tortilla on top. Cover with remaining enchilada sauce. Sprinkle with remaining cheese. Bake 15 minutes or until heated through. Garnish with cilantro sprigs. Cut into wedges to serve.
