MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Glazed Chicken Stroganoff Categories: Dam, Main dish, Poultry Yield: 2 Servings 1 cl Garlic, minced 1 Shallot, thinly chopped 1/4 c Onion, thinly sliced 1 c Mushrooms; small, quartered 1/4 c Wine, dry white 1 c Chicken broth, defatted 6 oz Chicken breast; boned, Skinned, sliced thin 1 tb Cornstarch Pepper; coarsely ground 1 ts Worcestershire sauce 1 c Noodles; cooked & drained 1 tb Sour cream Paprika Parsley 1) In medium skillet, saute garlic, shallot, onion, and mushrooms in white wine, stirring until onions are translucent, about 5 minutes. Add small amount broth as needed, up to 1/4 cup. Remove vegetables and set aside. 2) In same skillet, simmer chicken over low heat, in 1/2 cup broth until tender, about 4 minutes. 3) Dissolve cornstarch in remaining 1/4 cup broth and stir into chicken. Stir in seasonings, sour cream, and cooked vegetables. 4) Serve over noodles. 5) Sprinkle with paprika and parsley, if desired.
