* Exported from MasterCook * Chicken a'la Laura Recipe By :Laura Serving Size : 4 Preparation Time :0:00 Categories : At Home With Richard Web Site Foodmover Low-Cal Main Dish Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound boned and skinned chicken breast halves -- cubed 1 bag frozen mixed vegetables 1 low sodium chicken broth -- bouillon cube 2 cups water 2 tablespoons lemon juice salt & pepper to taste -- optional 2 cups cooked rice DIRECTIONS: 1. Brush chicken with lemon juice. Season with salt and pepper to taste. 2. In a large skillet, brown chicken. Try to make sure it is almost done, but not completely. Dissolve bouillon cube in water and add to chicken. 3. Add veggies. Reduce heat and simmer until most of water is dissolved. Check to be sure chicken is completely finished before serving. 4. Place one 1/2 cup serving of cooked rice on plate, and top with about a large serving spoonful of chicken mixture. Serve with a small side salad or some fresh fruit. A nice fruit salad works nicely, too.
