* Exported from MasterCook * Ryan's Hope-You-Like-It Almost Irish Stew Recipe By :Richard Simmons Serving Size : 4 Preparation Time :0:00 Categories : Poultry Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 chicken breast, no skin, no bone, R-T-C 2 tablespoons butter 2 tablespoons whole wheat flour 1 medium onion -- quartered 1 stalk celery -- cut 1-inch thick 1/2 medium bell pepper -- chopped into large pieces 2 medium zucchini -- chopped into large pieces 4 medium carrots -- chopped into large pieces 1 medium red potato -- chopped into large pieces 1/4 cup parsley 2 cups chicken broth 1/2 teaspoon basil -- or thyme dash black pepper 1. Cut chicken into bite-sized pieces. Place in a plastic bag with flour and shake. Brown in butter in skillet. 2. Add broth and all vegetables and seasonings. Simmer until carrots and potatoes are cooked firm. If broth is too thin, add one tablespoon of flour dissolved in a little water and cook a few more minutes until thickened. 3.
