* Exported from MasterCook * Pink Tie Only Chocolate Souffle Recipe By :Richard Simmons Serving Size : 10 Preparation Time :0:20 Categories : Desserts Sweetie Pie Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup water 1 envelope unflavored gelatin(envelope) 2/3 cup granulated sugar 12 ounces raspberries, frozen -- dry pack, thawed 3 cups sliced peaches -- can,drained, no sugar added 1/2 cup peach jam 1/4 teaspoon almond extract 1/4 teaspoon salt 2 tablespoons egg whites -- powdered 6 tablespoons water -- warm 1 cup whipped cream, light -- non-dairy, thawed Sliced peaches and raspberries -- for garnish (optional) Make souffle collar by cutting pieces of waxed paper long enough to go around a 1 1/2 quart (3 inch deep) souffle dish and to overlap slightly. Fold waxed paper lengthwise in half. Wrap collar round outside of dish, extending about 2" over the rim. Pull paper tight so filling cannot run down between paper and side of dish. Secure paper with tape. In small saucepan, pour 1/2 cup water. Sprinkle gelatin over the top. Let stand to soften, about 5 minutes. Stir in sugar. Heat over medium heat, stirring, just until gelatin and sugar are dissolved, about 3 minutes: do not let boil! Remove from heat. In food processor, process raspberries. With rubber spatula, press raspberries through a fine sieve to remove seeds. Return raspberries to food processor. Add canned peaches, jam, almond extract, salt, and gelatin mixture. Process to puree. Scrape into a large bowl. Refrigerate, stirring, until mixture mounds when dropped from a spoon, about 2 hours. In medium bowl, whisk together powdered egg whites and 6 tablespoons of water until whites are completely dissolved, about 2 minutes. With electric mixer on medium speed, beat until firm peaks form. Gently fold whites into raspberry mixture until no white streaks remain. Fold in whipped topping. Spoon into prepared souffle dish, smoothing top. Freeze until firm, about 3 hours. To serve, place in refrigerator for 15 to 20 minutes to soften slightly. Remove collar. Garnish with peach slices and raspberries, if desired.
