Heat olive oil in a non-stick skillet and cook chicken until browned on both sides. Remove the chicken, add potatoes, onion and oregano and cook until browned, stirring often. Add chicken back to skillet along with broth and peppers and bring to a boil. Cover and cook over a low heat about 5-8 minutes.
