* Exported from MasterCook * Squash Croquettes Recipe By : Donna Barker Serving Size : 6 Preparation Time :0:00 Categories : Foodmover Cookbook Main Dish Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 pounds yellow squash -- coarsely chopped 1/2 cup onions -- chopped 1/2 cup saltine crackers -- crushed 2 eggs -- large 3/4 teaspoon salt 1/4 cup corn meal 1 tablespoon vegetable oil -- divided cooking spray Steam squash and onion, covered, for 15 minutes or until vegetables are tender. Drain well. Mash squash mixture with a potato masher or fork; stir in crushed crackers and next 3 ingredients. Cover and chill mixture for at least 3 hours. Place cornmeal in a large shallow dish.. Divide squash mixture into 12 equal portions. Working quickly, dredge squash, one portion at a time, in cornmeal, shaping into 3 inch patties; coat each patty with cooking spray. Coat a large skillet with cooking spray and add 1 teaspoon vegetable oil. Place skillet over medium heat until hot. Add 4 patties and cook 1 1/2 minutes on each side or until golden. Remove patties from skillet; set aside and keep warm. Repeat procedure with remaining patties. Garnish with parsley sprigs if desired.
