* Exported from MasterCook * Virginia Baked Chicken Recipe By :chickie@magicnet.net Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds chicken 1 slice ham slices, canned -- smoked cloves 1 tablespoon brown sugar 2 tablespoons flour 1/8 teaspoon pepper 1/2 cup stock 1 tablespoon butter -- or margarine 1 teaspoon onion -- grated 1 cup milk -- and water mixed Cut chicken for serving and wrap each portion in a thin slice of ham. Tie with a piece of string. Stick 3 cloves into each piece of ham. Place the chicken in a well greased pan and dust lightly with the mixture of brown sugar, pepper and 1 T of flour. Bake in 425 degree oven until fat begins to run, then reduce heat to 350 degrees and add stock (or water) with butter and onion added. Bake about 35 minutes, or until the chicken is brown and tender, basting often with pan liquid. Place on a platter and pour over it the gravy made by adding milk and water, blended with the other 1 tablespoon flour, to the g ravy.
