Appetizers & Snacks Spiced Rainbow Fries

Recipe Ingredients

1 medium russet potato
1 medium sweet potato
1 medium turnip
1 medium parsnip
1 medium or 2 small beets
4 cloves elephant garlic
1-1/2 Tbs. canola, safflower or peanut oil
1 tsp. chili powder
1 tsp. garlic powder
Salt to taste



Recipe Directions

Preheat oven to 350 degrees. Cut vegetables and garlic into French fries.

In a small bowl, combine oil, chili powder and garlic powder. Lightly coat potatoes, turnip, parsnip and beets with oil mixture.

Place oiled vegetables on baking tray; bake 30-40 minutes. About halfway through baking time, turn fries and scatter garlic
over them. For crispier fries, place under broiler 1-2 minutes before serving. Salt to taste. Serves 4 to 5.

PER SERVING: 185 calories; 2 gm protein; 5 gm fat; 33 gm carb.; 312 mg sodium; 5 gm fiber.
