Fish Chowder

This is my favorite recipe to
make and goes well and very fast....
Fry 1/2 pound of bacon in pan....when just about really crispy...remove from pan and crush
into little pieces and put aside. In bacon grease fry onion and 2 celery stalks till
golden....Add about 1 cup of flour and stir for about 1-2 minutes [making a roux]. Add 2
cups chicken broth and one bottle clam juice and stir with whisk till blended well. Cook
5-6 potatoes [cut into cubes] until just tender. Drain and add to above mix. Pouch or boil
fish, scallops, shrimp, anything......about 4 cups of anything.....and add to mixture.
Add about 1/2 gallon of half and half, salt and pepper to taste. Mix well and cook
about 20 minutes on low heat, stirring occasionally...[may stick sometimes]. till
thickness is desired. If thicker chowder is warranted...add about 4 TBSP. cornstarch with
about 1/2 cup cold water and mix in an stir well for about 5 minutes.
