Baked Fish Sandwich with Spiced Mayonnaise
Ingredients
- 1/2 cup dried bread crumbs, whole-wheat
- 1/4 tsp table salt
- 1/4 tsp black pepper
- 1 pound lingcod fillets, or other type of cod, four 4 oz pieces
- 1 serving cooking spray (5 one second sprays)
- 3 Tbsp reduced-calorie mayonnaise
- 3 Tbsp salsa
- 4 medium mixed-grain hamburger rolls
- 1 cup spinach, baby leaves
Directions
- Combine bread crumbs, salt and pepper in a small dish. Place fillets on a
dinner plate, dust each with bread-crumb mixture and press firmly to make
crumbs stay in place.
- Coat a 10-inch nonstick skillet with cooking spray and heat over medium
heat. Arrange fish in a single layer in skillet; cook for 5 minutes on one
side and 3 minutes on the other side, or until fish is golden and flakes
easily with a fork.
- Stir together mayonnaise and salsa in a small bowl. Spread about 1 1/2
tablespoons of mayonnaise mixture on the bottom half of each bun. Top each
with a fillet and 1/4 cup of spinach leaves; cover with bun tops.
