Mexican Café Con Leche

Ingredients

  • 3 cup water
  • 1/3 cup dark brown sugar, packed tightly
  • 1/8 tsp ground cinnamon, or to taste (or 1 cinnamon stick)
  • 1/2 cup black coffee, grounds
  • 3 cup fat-free evaporated milk
  • 1/2 tsp vanilla extract

Directions

  1. Bring water, sugar and cinnamon to a boil. Add coffee and turn down heat; simmer for 5 minutes.
  2. While coffee is simmering, heat evaporated milk in microwave on low or over a very low flame; do not let it boil.
  3. Strain coffee through a coffee filter. Add vanilla and heated milk; stir. Yields one cup per serving.
