Spinach with Pine Nuts and Raisins

Ingredients

Directions

  1. In a small microwavable bowl, plump raisins with hot water on high heat for 30 seconds.
  2. In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.
  3. Toss with raisins, nuts, salt and pepper. Serve immediately.
