Spinach with Pine Nuts and Raisins
Ingredients
- 2 Tbsp raisins
- 1 Tbsp hot water
- 1 tsp olive oil
- 1 medium garlic clove, minced
- 1 bunch spinach
- 1 Tbsp pine nuts, toasted
- 1/4 tsp table salt
- 1/4 tsp black pepper
Directions
- In a small microwavable bowl, plump raisins with hot water on high heat
for 30 seconds.
- In a large nonstick skillet over medium-high heat, warm oil; add garlic.
Cook until fragrant, about 1 minute. Add spinach and stir occasionally until
wilted, about 2 to 3 minutes.
- Toss with raisins, nuts, salt and pepper. Serve immediately.
