White-Frosted Cupcakes

Ingredients

  • 2 Tbsp powdered sugar
  • 3/4 cup regular egg substitute
  • 1/2 cup applesauce
  • 1 cup water
  • 4 oz fat-free cream cheese
  • 6 oz light cream cheese
  • 1 tsp vanilla extract
  • 1 package devil's food cake mix, unprepared

Directions

  1. Preheat oven to 350°F (175°C). Line 24 cupcake cups with paper liners or coat with cooking spray.
  2. Beat cake mix, water, applesauce and egg substitute together for 2 minutes at medium speed. Pour batter into prepared muffin pans.
  3. Stir together low-fat cream cheese and vanilla. Drop a spoonful of the mixture into center of each cupcake. Bake till firm, 19 to 22 minutes. Cool completely before icing.
  4. For icing, stir together cream cheese and powdered sugar. Do not stir too vigorously or it will become too soft to spread. Divide icing among cupcakes and spread to cover tops.
