Herbed Minestrone Millazzo

Makes 8 servings

15 ounces mild or hot ground turkey sausage
2 cups coarsely chopped cabbage
1 cup diced onion
1 cup diced carrots
1 cup diced celery
2 cups canned beef broth
2 cups canned tomatoes, cut up
1 large garlic clove, minced
1 1/2 teaspoons basil

2 cups cooked vermicelli, break into small pieces before cooking 1 cup frozen peas

1 cup fresh spinach, chopped 1 cup sliced zucchini

In large saucepan, brown sausage and cook cabbage, onion, carrot and celery with garlic and basil until tender. Add broth, tomatoes and zucchini. Bring to a boil, reduce heat and simmer 20 minutes or until done, stirring occasionally. Add remaining ingredients, heat and stir occasionally. Divide evenly.

Each serving provides: 1 1/2 protein/milk, 1/2 bread, 1 1/4 fruit/vegetable 6 grams fat, 7 grams fiber
