1 1/2 cups salad oil
2 cups sugar
4 eggs
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
2 cups flour
1/2 cup chopped pecans
3 cups grated carrots
1 tsp. vanilla
cream cheese icing:
1 8 oz. cream cheese
1 stick (1/2 cup) butter
1 tsp. vanilla
dash salt
cinfectioners sugar

Grind your carrots. Blend in oil and sugar together then add the eggs one at a time beating after each addition. in a seperate bowl combine the flour,baking soda,baking powder,salt,and cinnamon. Combine with the oil and egg mixture and add vanilla and nuts. Mix well and pour into a floured cake pan. bake at 350 degree oven for 35 to 40 minutes. Check for doness. When done remove from over and cool. Ice with cream cheese icing once cooled off a bit..
Cream cheese icing:
Mix together ingredients. Add about 1 1/2 libs. confectioners sugar. Mix well with mixer.
