Meat Soup

1/2 pound osso buco or chest
1 1/2 litres meat broth
2 tablespoons coriander
1 crushed garlic clove
1 small onion, diced
1 green pepper in slices
1 cup yucca in squares
1 potato in squares
1/2 cup carrot in squares
salt and pepper to taste

Season the meat with salt and pepper. Put the meat in a pot and add the meat broth, the garlic, coriander, onion and peppers. Cook for 35 minutes or until the meat is tender. Add the rest of the ingredients and cook for 30 more minutes (if you need to add more water you can always do it).

1 hen in pieces
3 pounds yam
4 cups chicken broth
2 large onions, chopped
1/4 cup coriander leaves, chopped
1 teaspoon oregano
1 teaspoon crushed garlic
salt and pepper to taste
Enough water to cover the hen and the yam

This soup is a very popular Panamanian recipe. It is by itself a main dish and it´s usually served with plain rice.

Clean the hen pieces very well. Season with salt, pepper and garlic. Fry the hen pieces in their own fat. Add the water and the chicken broth and cook on low heat. When it boils add the onions and the coriander leaves. When the hen is tender taste the soup and rectify with salt. Clean and skin the yam. Cut it in medium-sized pieces. Add it to the soup with the oregano and cook until the yam is tender. Serve hot.

4 Tbsp. Butter
1/2 C. Flour
20 oz. Beef Consommé
1/4 C. Carrot, diced
1/4 C. Celery, diced
1/4 C. Onions, diced
1/2 C. canned Tomatoes, diced
3/4 tsp. Kitchen Bouquet
1 Beef Bouillon Cube
1/4 tsp. Ground Black Pepper
1/2 tsp. MSG - Monosodium Glutamate - Accent
5 oz. frozen Mixed Vegetables
1/2 lb. Ground Beef - browned and drained

Place the butter in a soup pot and allow to melt without browning. Add flour and stir to form a smooth paste. Cook the mixture over medium heat, without browning for 3 minutes, stirring constantly. Add the consume to the roux and stir until smooth and lightly thickened. Bring to a full boil. Add the fresh vegetables, tomatoes, and seasonings and allow to regain a boil. Reduce the heat and simmer until the vegetables are just barely tender. (This should take about 20 to 30 minutes.) Add the frozen vegetables and browned ground steak. Simmer an additional 15 minutes.
