Chinese Sweets


 
Almond Cookies

2 1/2  cups flour
3/4 cup sugar
1/4 tsp salt
1 T. baking powder
3/4 cup shortening
1 egg
2 T. water
1 tsp almond extract

Mix shortening with egg until creamy. Add water and almond extract. Mix well. Gradually add dry ingredients, stirring with fork until mixture draws away from sides of bowl. Blend with hands. Refrigerate 1 hour. Shape into 1-inch balls and place on a greased cookie sheet. Flatten with palm of hand to 1/4-inch thickness. Press half an almond in each if desired. Bake in a preheated 350 degree oven for 25 minutes or until golden. Makes 3 dozen cookies.
