                         Nutty Orange Coffee Cake

3/4 c. sugar
1/2 c. chopped pecans
2 tsp. grated orange rind
1 8 0z. pkg. cream cheese (probably won't use the whole package, but I always use more
                            than the 4 oz. the recipe originally called for)
2  (11 oz. each) cans refrigerated buttermilk biscuits
1/2 c. butter, melted
1 c. powdered sugar
2 Tb. fresh orange juice

Combine the first 3 ingredients in small bowl; set aside. Place about 1 tsp. cream cheese on half of each biscuit; fold biscuit over cheese, pressing edges to seal. Dip biscuits in melted butter, and dredge in the sugar mixture (the first 3 ingredients that you had set aside); place curved side down in lightly greased 12 c. bundt pan, spacing evenly.  Drizzle remaining butter over biscuits; sprinkle with any remaining sugar mixture. Bake 350 F. for 40 min.  Immediately invert onto serving plate. Combine powdered sugar and orange juice, stirring well; drizzle over warm coffee cake.

                               Turtle Cake

   1      Box           German chocolate cake mix
   1      14Oz Pkg.     light Kraft caramels
     1/2  Cup           evaporated milk
   1 1/2  Sticks        butter (3/4 cup)
   1      Cup           milk chocolate chips
   1      Cup           peans -- chopped, coarsely

In large bowl of electric mixer, prepare chocolate cake mix according to package directions.  Pour half the batter (reserving other half) into well-greased and floured 9x13-inch baking pan. Bake at 350 F. for 15 minutes.  Remove from oven. While cake is baking, in medium pan, combine caramels, evaporated milk, and butter.  Cook over medium heat, stirring occasionally until caramels are melted.  ( I do this in the microwave oven)  Pour this mixture over baked layer of cake and spread smoothly. Sprinkle with layer of chocolate chips and top with layer of nuts.
Pour remaining half of cake batter over top.  Return to oven and bake an additional 20-25 minutes until cake springs back when touched.  Remove and cool completely on wire rack.  Cut into squares and serve. Serve with ice cream, sprinkle with confectioner's sugar or frost with chocolate or German sweet chocolate frosting. I frost with chocolate frosting made with butter, confectioner's sugar, baking chocolate, vanilla and a touch of milk to make it spreading consistency.

The spinach salad recipe I got years ago from the mother of a boyfriend of mine.  She was a member of a gourmet cooking club.  It uses a raw egg yolk in the dressing, but I've never had any problems!

                          Richards' Bean Salad

3/4 c. cider vinegar
3/4 c. vegetable oil
1 1/2 c. sugar
1 tsp. pepper
2 tsp. salt
2 onions, sliced, then take slices apart to make rings
2 green peppers, sliced into rings
1 can kidney beans, drained
1 can green beans, drained
1 can yellow beans, drained
1 can chick peas, drained

Mix all ingredients together and refrigerate.  The salad tastes better if it's refrigerated overnight before serving.

                      Richards' Cucumber Jello Salad

2 pkg. lime jello
2 c. water
2 Tb. cucumber, grated
2 Tb. carrot, grated
2 Tb. green pepper, grated
2 Tb. onion, grated
2 c. cottage cheese
1 c. whipping cream, whipped
1/2 c.mayonnaise
salt to taste

Heat water to boiling and dissolve jello.  Add next 5 ingredients and mix well.  Stir in the mayonnaise.  Fold in the whipped cream. Refrigerate until set.  Good-tasting salad!

                          Spinach-Mushroom Salad

  10      ounces        fresh spinach -- washed and dried
   1      bunch         green onions -- chopped
   1      pound         fresh mushrooms -- sliced
   7      slices        bacon -- cooked and crumbled
          DRESSING:
   1      clove         garlic -- minced
   6      Tablespoons   olive oil
   2      Tablespoons   lemon juice
     1/8  teaspoon      dry mustard
     1/2  teaspoon      sugar
     3/4  teaspoon      salt
     1/8  teaspoon      pepper
          1             egg yolk

Wash the spinach well and dry.  Tear into bite-sized pieces. Chop green onions (even the green part) clean and slice mushrooms Cook bacon until really crisp, drain and crumble.

DRESSING: Mix ingredients for the dressing in a jar, cover and shake well, making sure the egg yolk is mixed in well. Pour over salad ingredients just before serving. This recipe makes a big salad, but most will want seconds and more!
