Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
   1 cup water -- (8 ounces)
   1 1/2 tablespoons canola oil
   1 1/2 tablespoons unsulfured molasses
   1 teaspoon vanilla extract
     1/2 teaspoon liquid lecithin
1/2 cup mashed sweet potatoes or yams -- (4 1/2 ounces)
3 cups whole wheat flour -- (14 ounces)
   2 tablespoons gluten flour
   3 tablespoons powdered whey
1 1/2 teaspoons fine sea salt
   2 teaspoons active dry yeast
     1/2 cup raisins -- (2 1/2 ounces)

Put all the ingredients, except the raisins, in the inner pan in the
order listed or in the reverse order if the manual for your machine
specifies dry ingredients first and liquids last. Select Basic Wheat
Cycle, Medium Setting (or the equivalent setting for your machine).
Push Start. Add the raisins when the machine beeps, about 12 minutes
after starting.

Makes one 1 1/2 pound loaf.

NOTES : For the best flavor and nutrition, I recommend you take the time
to bake the yams or sweet potatoes -- about 1 1/2 hours in a 350F oven --
until tender. Let them cool until you can peel them, then mash and let cool
completely before making the bread.

American Garlic & Parsley Bread --- ABM

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 teaspoons active dry yeast
   3 cups bread flour
   3 tablespoons wheat germ
   3 tablespoons wheat bran
   1 3/4 teaspoons salt
   2 tablespoons sugar
   2 tablespoons vegetable oil
   2 cloves garlic -- minced
3 tablespoons fresh parsley -- chopped
   1 1/4 cups water

Add all ingredients in the order suggested by your bread machine manual
and process on the basic bread cycle according to the manufacturer's
directions. For DAK / Welbilt, use white bread setting. Let the loaf
cool before slicing. Serve plain or toasted. Baking the garlic right
in the loaf lightens the garlic flavor. If this is not a strong enough
garlic "statement" for you, simply add another clove, or two....

NOTES : This bread tastes as fresh and bright as a summer morning. Do not
substitute fresh blueberries for dried as they contain too much liquid and
will disrupt the balance of ingredients. Dried blueberries are available
in natural food stores and specialty shops.
