Chicken Supreme

Ingredients:

In plastic or paper bag combine the first four ingredients. Cut chicken breasts in half & add a few pieces at a time to the bag. Shake & coat. In large skillet, brown chicken in hot Crisco. Transfer browned chicken to 13x9 baking dish; reserve drippings in skillet. Add onion to drippings; cook until tender. Stir in the 2 tbsp. flour & 1/2 tsp. salt. Add the milk; cook & stir until thickened & bubbly. Stir in the drained mushrooms & lemon juice. Pour over chicken. Bake covered at 400 degrees, for about one hour or until tender. Sprinkle with cheese continue to bake until cheese melts.

Oven Barbequed Meatballs

Ingredients:

Preheat oven to 350 degrees. In a bowl, combine the egg, milk, bread crumbs, 1/2 cup onion, salt, 1/2 tsp. Worcestershire sauce & pepper. Add beef & mix well. Shape mixture into 18 meatballs. Combine the flour & paprika. Roll each meatball in flour mixture. In large skillet, brown meatballs in hot Crisco. Transfer meatballs to 2 quart casserole dish. Drain off excess fat from skillet. In same skillet, combine the catsup, water, 1/4 cup onion, vinegar, sugar, Worcestershire sauce, & celery see. Bring to boiling. Pour over meatballs in casserole dish. Cover & bake for 45 minutes. Skim off excess fat. Serve meatballs & sauce over hot noodles

Quick Lasagna

Ingredients:

Brown ground beef in large skillet; drain off excess fat. In food processor or blender; blend tomatoes. Add tomatoes & seasoning to skillet let simmer for 30 minutes. Cook noodles during this prepartion. In 13x9 casserole dish, layer noodles, meat sauce & cheeses. Bake in preheated 350 degree oven for 20 to 25 minutes or until bubbly & cheese is melted.

Chicken Casserole

Ingredients:

Boil chicken until done. Remove from the broth. Let cool. Debone & chop into bite size pieces. Mix remaining ingredients together & pour into 2 quart casserole dish. Bake at 400 degrees for 15 to 20 minutes.

Bourbon Balls

Ingredients:

Mix well , form into small balls, and place in freezer.

Chocolate Coating

  • 2 bars parrafin wax
  • 1 large bag chocolate chips
In double boiler over simmering water, Melt wax and chocolate on low heat. Keep warm. Dip each ball once or twice, using a dipping fork. Immediately place on wax paper.

Nuggets

Cream the first three ingredients together well. Add the remaining ingredients. Drop by teaspoons on cookie sheet. Bake on 325 degrees for 20-25 minutes.

Kentucky Derby Pie

Ingredients:

Combine sugar, syrup, and butter in a saucepan and cook over low heat, stirring constantly until sugar dissolves and butter melts. Cool slightly. Add eggs and vanilla, stir in pecans. Sprinkle chocolate chips in the bottom of the pie shell and pour pecan mixture on top. Bake at 350 degrees for 45 minutes.

Chocolate Delight

Ingredients:

Melt butter & add sugar, flour, and pecans. Mix together well, spoon into 9x13. Bake at 325 degrees for 10-12 minutes. Cool completely before adding the other layers.

First Layer

  • 1 cup confectioners sugar
  • 1 8 oz. pkg. cream cheese
  • 1 cup cool whip
Beat all three ingredients together until creamy. Spread over cold crust.

Second Layer

  • 2 large pkg. instant chocolate pudding mix
  • 4 cups milk
  • 1 large container cool whip
Beat the pudding mix with the milk until thick & creamy. Spread over first layer, and top with cool whip. Chill 2 hours.

Fudge Puddles

Ingredients:

Fudge Filling:
  • 1 cup (6 ounces) milk chocolate chips
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 1 tsp. vanilla
  • chopped peanuts (optional)
In a mixing bowl, cream butter, peanut butter & sugars; add egg & vanilla. Stir together flour, baking soda, & salt; add to creamed mixture. Mix well. Chill for 1 hour. Shape into 48 balls, 1 inch each. Place in lightly greased min-muffin pans. Bake at 325 for 14-16 minutes or until lightly browned. Remove from oven & immediately make "wells" in the center of each by lightly pressing with a melon baller. Cool in pans for 5 minutes, then carefully remove to wire racks. For Filling, melt chocolate chips in a double boiler over simmering water. Stir in milk & vanilla; mix well. Using a small pitcher or paster bag, fill each shell with the filling. Sprinkle with peanuts. Makes 4 dozen.

Chocolate Cream Pie

Ingredients:

Bake pie shell. Stir together sugar, cornstarch, & salt in saucepan. Blend milk & egg yolk; gradually stir into sugar mixture. Cook over medium heat; stirring constantly, until mixture thickens & boils. Boil & stir for one minute. Remove from heat; blend in melted chocolate & vanilla. Immediately pour into baked pie shell & cover with plastic wrap. Chill pie at least 2 hours. Top with sweetened whipped cream.

Elve's Fudge

Ingredients:

Combine butter, sugar, & milk. Boil 5 minutes, remove from heat & add remaining ingrediensts, except the walnuts. Mix well, then add the walnuts. Spoon into buttered 9x13 pan. Cool & cut into 1 inch squares. Makes 5 pounds.

Ingredients:

Mix all the above ingredients together & store in a canister or plastic container

Divinity

Ingredients:

In a saucepan, boil sugar, water & corn syrup, keep stirring gently. The mixture is done at 235 degrees or when it forms a soft ball when a small amount is dropped into cold water. Using a candy thermometer is more accurate. Beat the egg white until it forms stiff peaks. Pour the sugar mixture into the beaten egg white, continually beating. Add vanilla, nuts, salt, & coloring (if desired). Beat until almost hard, then drop by spoonfuls on waxed paper. Makes 35-40 pieces.

Peanut Butter Balls

Ingredients:

  • 2 sticks (1 cup) melted butter
  • 3 cups crushed vanilla wafers or graham crackers
  • 1 1/3 cup creamy or crunchy peanut butter
  • 1 box of confectioners sugar (1lb)
  • 1 tsp. vanilla
Mix all the above ingredients together well, shape into 1 inch balls. Refrigerate until firm./b>

Chocolate Coating

  • 12 oz sweetened milk chocolate chips
  • 1/2 bar parrafin wax
In a double boiler over simmering water, melt the wax & chocolate together on low heat..Keep warm..Dip each ball in the chocolate mixture, using a toothpick or dipping fork. Place on wax paper.

Pecan Tassies

Ingredients:

  • 1 3oz pkg. cream cheese-softened
  • 1/2 stick of butter
  • 1 cup sifted all purpose flour
Mix the these ingredients together, shape into one ball, cover & chill. Then shape into 24, 1 inch balls- press into mini muffin pans.

Filling

  • 3/4 cup light brown sugar
  • 1 tbsp. soft butter
  • 1 tsp. vanilla
  • 2/3 cup finely chopped pecans
  • 1 egg-beatened
Mix ingredients & fill into the above prepared pastry pans. Bake at 325 degrees for about 25 minutes.

Hershey's Kiss Peanut Blossoms

Ingredients:

  • 1/2 cup shortening
  • 3/4 cup Reeses's Creamy Peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla
  • 1 1/2 cups sifted all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 pkg Hershey's Kisses
  • additional granulated sugar for rolling
Heat oven to 375 degrees. In large bowl, beat shortening & peanut butter until well blended. Add 1/3 cup granulated sugar & brown sugar; beat until light & fluffy. Add egg, milk & vanilla; beat well. Stir together flour, baking soda & salt; gradually add to peanut butter mixture, beating until well blended. Shape dough into 1 inch balls. Roll in granulated sugar; place on ungreased cookie sheet. Bake 8-10 minutes or until lightly browned. Immediately place a Hershey's Kiss on top of each cookie, pressing down slightly. Remove from cookie sheet to wire rack. Cool. Makes 4 dozen
