Why do we call a hamburger a "hamburger, when clearly it does not contain ham?"
The hamburger was not named for the meat it contains, but for the city that popularized it-Hamburg, Germany.

HINTS ON COOKING HAMBURGERS
Grilling burgers can be simple-if we remember the key: consistency. By making patties all about the same size and thickness, they should all be cooked through at the same time. They should be ready for turning at the same time, so we can flip right across the grill like a pro.

When preparing uniform burgers, we have options. We can always use pre-made burgers from the supermarket. Or we can make perfect patties ourselves with a handy and reasonably priced hamburger press. You can find these in most supermarkets and housewares stores.

Don't do it!!!! Do not press on thick burgers with a spatula while they cook. It really doesn't make the burgers cook any faster and it actually squeezes out flavorful juices.

Get adventurous with your burgers. Beat boring burgers by mixing your ground meats with taco seasoning, shredded cheeses, chopped veggies, salad dressings, salsa or practically any seasoning.


Jalapeno Cheeseburgers
(4 burgers)

1 to 1 1/4 pounds ground beef
1/2 cup (2 ounces) shredded Monterey Jack or Cheddar cheese with jalapenos
2 tablespoons dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
Preheat the grill to medium-high heat. In a medium-sized bowl, combine all the ingredients; mix well. Divide the mixture into 4 equal amounts and make 4 patties. Grill for 8 to 12 minutes, or until desired doneness beyond that, turning the burgers over halfway through the grilling.

SEASONED BURGERS
1 pound lean ground beef
1 teaspoon Beef-Flavor Instant Bouillon
Combine ingredients; shape into patties. Grill or broil 5 to 7 minutes on each side or to desired doneness. (Makes 4 servings)
Variations
ITALIAN BURGERS
Combine beef mixture with 2 tablespoons grated Parmesan cheese and 1 teaspoon Italian seasoning. Prepare as above. Serve with pizza sauce.
ORIENTAL BURGERS
Combine beef mixture with 1 (8-ounce) can water chestnuts, drained and chopped, and 1/4 cup sliced green onions. Prepare as above. Top with pineapple slice; werve with sweet and sour sauce.
MEXICAN BURGERS
Combine beef mixture with 1 (4-ounce) can chopped green chilies, drained, and 1/4 cup chopped onion. Prepare as above. Serve with sour cream and salsa.
GARDEN BURGERS
Combine beef mixture with 1 tablespoon chopped green bell pepper and 2 tablespoons Thousand Island salad dressing. Prepare as above. Serve with colesalw and chopped tomato.
MID-WEST BURGERS
Combine beef mixture with 1/2 cup frozen hash brown potatoes, thawed, and 2 tablespoons barbecue sauce. Prepare as above. Serve with barbecue sauce.
GERMAN BURGERS
Combine beef mixture with 2 tablespoons chopped dill pickle and 1 teaspoon caraway seed. Prepare as above. Serve with sauerkraut if desired.
