SPAGHETTI VODKA

This is a Frugal Gourmet recipe. This is a more contemporary Italien dish. Do not use expensive vodka in this recipe, as the cheaper brands such as Smirnoff have a lot more flavor. Believe me... this recipe may sound a little weird, but it is great! As an added bonus, it is very fast and easy to prepare, but tastes completely gourmet!

INGREDIENTS
2 tablespoons olive oil 2 cloves garlic, crushed 1/2 cup dry white wine 1 cup whipping cream 1/4 cup grated Ramano cheese 1/4 cup thinly sliced and chopped prosciutto Salt and pepper to taste 3/4 pound spaghettini 1/2 cup vodka Chopped fresh parsley for garnish

Heat a medium sized frying pan, add the oil and the garlic, and sautee for 30 seconds. Add the wine and simmer for 2 minutes. Add the cream and simmer for 2 minutes more. Add the cheese and proscuitto and heat until smooth. Salt and pepper to taste.

Cook the pasta until al dente in lightly salted water. Drain well.

Bring the sauce to a simmer again and add the vodka. Simmer for 30 seconds. Toss pasta with sauce, and garnish with chopped parsley.

A Pinot Bianco from Italy's eatern region is what I would most want to serve with this dish, although any of the dryer whites would be good too!

Since strawberry season is upon us, this is my favorite Italien summer dessert. Get some nice big strawberries... wipe off with a damp cloth (never wash under water!)... cut in half... and drizzle with some good balsamic vinegar! Sound strange? Maybe... but sooo good! For those with a sweeter tooth, toss strawberries in a little sugar before adding the balsamic vineger. Trust me... its great!
