Banana Nut Bread Butter


                            10 ripe bananas (or enough mashed to get 3 cups)
                            2 cups chopped walnuts (lightly toasted is best)
                            1 1/4 teaspoon cinnamon
                            1/4 teaspoon nutmeg
                            1 tablespoon lemon juice
                            4 cups sugar
                            1/2 cup brown sugar
                            1 package powdered pectin

                            Combine banana, nuts, cinnamon, nutmeg, and lemon juice in large saucepot. Stir in pectin until
                            dissolved. Bring mixture to full boil. Add sugars while stirring constantly, return to full rolling boil, and
                            boil hard for 1 minute. Remove from heat, quickly skim foam if neccessary. Ladle into prepared jelly jars,
                            wipe rims clean, and adjust hot 2-piece lids. Process 15 minutes in boiling water bath. Cool completely
                            on wire rack (overnight) before checking seals and storing. Makes 7 cups.

                            The jar I was given had pieces of banana visible in it too, which gave it a nice texture along with the
                            nuts ... so I would suggest dicing a few, rather than mashing all 10 bananas.
