Bean Soup Mix RECIPE


Calico Bean Soup MIX
4 T. lima beans-large-     2 T. lentils
3 T. lima beans -small-     2 T. black eyed peas
3 T. red kidney beans     2 T. pinto beans
3 T. great northern beans     2 T. garbanzo beans
2 T. split beans      2 T. navy beans
2 T. white beans -small-     2 T. black turtle beans


Spice packet:

1 t. chili powder      1 t. dried bell pepper
1/4 t. garlic powder      1/2 t. oregano
1 T. chopped dried onions     1/4 t. cracked black pepper

To make the soup mix, combine all ingredients in a bag. Place the spices in a small plastic bag. Very small ziplock can also be found at craft shops. Include the following recipe:

Calico beans soup:
Package of beans      1 large onion chopped
packet of spices      1 28 ounce can of tomatoes
ham bone, ham hock or 1/2 pound of ham   juice of 1 lemon
2 quarts of water (or broth)      salt to taste

Wash beans thoroughly. Place in a large kettle, cover with water and soak overnight.(An alternate method is to bring beans and water to a boil, remove from heat, cover and let stand for 1 hour). Then drain beans and add 2 quarts of new water and ham or ham hock. Simmer slowly for 2 1/2 hours to 3 hours. Then add spice packet, onion, tomatoes (undrained), lemon juice and salt to taste. Simmer another 30 minutes or until beans are tender.

Take ham for soup. Remove any bits of ham from bone and return to soup. If using boneless ham, cut into bite size and return to soup. Serve.

*Note: substitute beans freely: there should be approximately 1 pound of beans in all.
