I tried this recipe yesterday. Very tasty. I especially if you love spicy hot spreads. I make a jalapeno jelly that tastes similar but this relish has a nice crunch.

Hot Pepper Relish

from the pkg insert in SureJell for Lower Sugar Recipes Fruit Pectin

2 green peppers

2 red peppers

10 fresh jalapeno peppers

1/2 cup cider vinegar

1/2 cup water

3 cups of sugar

1 pkg of SureJell for Lower Sugar Fruit Pectin

Remove stems; seed and finely chop all peppers.

After chopping, should have 1 1/2 cups each of green and red peppers

and 1 cup of jalapeno peppers

(I used what peppers I had on hand and just made sure

I ended up with 4 cups of finely chopped peppers)

To the pepper mixture, add the cider vinegar and water.

Mix 1/4 cup of the measured sugar with the pectin and add it to the

mixture

Bring mixture to full rolling boil (one that cannot be stirred down)

over high heat, stirring constantly.

Quickly stir in remaining sugar. Return to a full rolling boil and

boil exactly 1 minute, stirring constantly.

Remove immediately from heat. Skim foam

Immediately fill jars and seal as directed.

Boiling Water Bath for 10 minutes.

Yield 6 cups (I got 5 1/2 half pints from one recipe)
