Maple Cherry Syrup


                            1 1/2 c maple syrup
                            1 c brown sugar, packed
                            1/2 c honey
                            juice of 2 oranges
                            1 tsp. orange peel
                            juice of 2 lemons
                            1 tsp. lemon peel
                            2 tb butter/margarine
                            1 ts cinnamon, ground
                            1 c dried cherries, chopped

                            Combine maple syrup, brown sugar, honey, juices and grated rind in medium saucepan. Bring to a boil,
                            stirring constantly. Reduce heat, simmer 10 minutes. Add cherries, cook 2 minutes. Serve over
                            pancakes, waffles, etc.

                            I would think that packing and processing 10 mins would be fine. I would substitute chopped fresh
                            apples for dry cherries. Also, I suggest omitting the butter completely, as that can cause problems
                            leading to spoilage!
