Maple Glazed Carrots
Ingredients (4 servings)
8 ea Medium sized carrots
1 ea Rind, of orange grated
1 ea Pinch of mace or nutmeg
1/2 c Fresh orange juice
3 tb Maple syrup
3 tb Butter
Instructions
Peel carrots; slice, dice or leave whole. Pack into jars and mix up rest of ingredients and fill the jar with the mixture. This is a regular recipe for glazed carrots and I would use this recipe as a guideline. You can then process your carrots in pints for 25 min. at 11 lbs pressure in a dial gauge canner. If you are doing quarts you do them 30 min. Is this what you were looking for?
