Mini Apple Pies Recipe

       This recipe is for those of us who wish we were canning and making things from scratch all the time, but for whatever
       reason, cannot. I used to cook like a purist, but now I work 60 hours a week, and am gradually starting to accept that
       using convenience foods sometimes will not kill my family! I found this and it is fast and smells good, even if it's not a
       real apple pie from scratch! It makes 1 to 10 servings, depending on your appetite!!!

       MINI APPLE PIES

       1 tube (7 1/2 oz) refrigerator biscuits
       1 tart apple, peeled and finely chopped
       1/4 cup raisins
       3 T sugar
       1 tsp. ground cinnamon
       2 T butter

       Using a rolling pin, flatten each biscuit to a 3-4 inch circle. Combine apple, raisins, sugar and cinnamon. Place a Tblsp
       filling on each biscuit. Dot with butter. Bring up sides of biscuit to enclose filling and pinch to seal. Place in ungreased
       muffin cups. Bake at 375' 11-13 minutes, or until golden brown.
