Indredible Vidalia Onion Tart RECIPE
   Made this tonight and it was so good I had to share it with you. The aroma filled the whole house, and Eric (my hubby) kept coming in the kitchen with, "What's that great smell!". This is a wonderfully complex tasting easy tart that really packs a visual punch. I actually used a 9" tart pan, not a 10", but you could probably use a springform (cheesecake)   pan too. Would be great for lunch party w/ sliced tomatoes and fresh green salad or fruit salad. Wonderful for a brunch or light dinner too.
   My own notes for this recipe: Used swiss instead of gruyere, 2 tsp. dried thyme instead of fresh, 1/2 c. Cheese mixed in w/ onion mixture, 3 strips bacon instead of 2, used Maui sweet onions instead of Vidalia. Otherwise followed recipe exactly. Next time only use 1 tsp. salt.

Adapted from Vidalia Onion Tart, Vidalia Onion Committee     Makes 8 servings

      1 refrigerated ready-to-bake pie crust circle (from a 15-ounce package)
      2 tablespoons butter
      2 1/2 pounds (about 8 cups)Vidalia onions, sliced
      3/4 cup diced red bell pepper
      2 teaspoons salt (I would use 1 tsp. next time)

      2 teaspoons fresh thyme leaves, crushed (I used dried)
      1/8 teaspoon freshly ground black pepper
      2 strips bacon, cooked crisp and crumbled
      1/2 cup grated Gruyere cheese, divided (I used more cheese in the onion mixture and swiss instead of gruyere)

1. Following package directions, press pie crust into a 10-inch tart pan that has a removable bottom; set aside.
2. In a large skillet over medium-low heat, melt butter; add onions, red pepper, salt,thyme and black pepper. Cook and stir until onions are soft, about 12 to 15 minutes. Reduce heat to low and continue cooking for 30 minutes, stirring       occasionally.
3. Stir in crumbled bacon and 1/4 cup grated Gruyere cheese. Place mixture, along with all pan juices, into prepared pie shell. Bake in a pre-heated 350-degree oven for 60 minutes or until crust and onions are golden brown. Top with remaining 1/4-cup Gruyere and return to oven until cheese has melted and begins to brown. Serve warm or at room temperature.
