I was reponding to Maryb with a similar recipe on "Gather the troops" and the recipe did not post. So here it is. Cut
the top out of a sugar pumpkin, scoop out seeds (salt and roast for kids) scoop out some of the pulp, set aside. Put
the pumpkin upside down on a baking sheet, bake 20 min at 350. Remove from oven set aside.
In a sauce pot, steam 1/2 cup onion an chopped pumpkin pulp in 1 cup chicken stock. Add succatash and chopped sage, salt, pepper (to taste) (you can add cooked chicken or shrimp) Pour mixture into pumpkin shell, serve. If you use shrimp, use fish stock. It's a no fat recipe from Graham Kerrs cookbook. Gina xoxoxo
