Refrigerator Pickles: try again
Posted this yesterday, was there, now it's gone, floating in cyberspace somewhere. Take 12-15 large cucumbers, 2 green peppers, 2 red peppers, and soak in 1/2 cup salt for 2 hours. Drain & rinse. Add 2 large onions, 2 stalks celery, pack in jars. Boil 2 cups vinegar, 2 cups sugar and pour over veggies. Put in fridge, ready to eat in 1-2 days. Lasts for several weeks (months) in fridge. Wouldn't really know, never lasts that long here.
