Mrs. Field's Pumpkin Spice Cookies

      2-1/2 c. all purpose flour
      1/2 tsp. baking soda
      1/4 tsp. salt
      2 tsp. pumpkin pie spice
      ! c. dk. brown sugar
      1/2 c. white sugar
      3/4 c. butter, softened
      1 lg. egg
      1 c. pumpkin(canned or fresh cooked)
      1 tsp. vanilla extract
      1 c. raisins
      1/2 c walnuts

      Preheat oven to 300.
      In med. bowl combine flour, soda, salt, and pie spice. Mix well and set aside. In lg. bowl blend sugars w/ mixer at med.
      speed. Add butter and beat to form a grainy paste. scrape sides of bowl, add eggs, pumpkin and vanilla. Beat at med.
      speed untyil light and fluffy. Add flour mixture, raisins,and walnuts. Blend at low speed, just until combine. don't
      overmix.
      Drop by rounded tbs. on ungreased cookie sheets 1-1/2 in apart. bake 22-24 min.

      THese coookies are really good. I've also substituted sweet potatoes and pecans into this recipe with good results.

      Does anyone Know of any good cookies that are rolled out. I want to use my halloween cookie cutters. thanks
