I got this recipe from my mother-in-law. Since she is now in a resthome I'm left with making it for the whole family. It's a very easy recipe.

Pickled Squash

1. 8 cups (packed) thin sliced tender squash(crook neck) do not peel squash

2 cups thin sliced onions

1/2 cup green (bell) peppers, sliced thin length wise

1 tablespoon table salt

Combine in pan and let set one hour

2. 1 1/3 cups sugar

1 1/2 cups white vinegar

1 tablespoon celery seed

1 tablespoon mustard seed

Mix and bring to a boil.Add to squash and cook 5 minutes. Put in clean jars and seal. Makes about 5 pints.
