Green Tomato Walnut Conserve

5 C. green tomatoes (2 lbs.), cored

1 1/2 lbs. seedless green grapes, rinsed

5 C. Granny Smith apples, cored and diced, but not peeled

1 1/2 C. sugar

1 1/3 C. apple cider

1 1/2 C. walnut pieces, toasted

Place tomatoes, grapes, apples, sugar, and apple cider in a heavy-bottomed pot and bring slowly to a boil over medium heat, stirring occasionally with a wooden spoon. Lower the heat slightly, stir occasionally, and keep the mixture at a fast simmer for 1 1/4 hrs., until it is very thick. Stir the walnuts in and cool. It will keep in the refrigerator in a covered glass container for at least a month; or you can can it in half-pint jars in a boiling water bath for 20 mins., if you want to keep it longer or give it as a holiday gift.

This recipe is fronm a book called Tomato Imperative!, and under the recipe it says that it's good with whole-wheat pancakes, or in the middle of a pretty dish and drizzle it with Creme Fraiche, yogurt, or just very thick sweet cream to end a meal nicely.
