Gazpacho 3 Tblspns white wine vinegar 2 1/2 cups tomato or vegetable juice (V8) 2 Tblspns extra virgin olive oil 1 cup peeled, seeded fresh tomatoes 1/2 cup finely chopped celery 1/2 cup finely chopped cucumber 1/2 cup finely chopped green pepper 1/2 cup finely chopped green onion 1 large clove of garlic, mashed 2 Tblspns fresh parsley 1/2 tsp salt 1/2 tsp pepper 1/2 tsp. worcestershire sauce Combine all ingredienst in a glass or stainless stell bowl Cover and refrigerate overnight Great served with Tuna sandwiches, or by itself with a nice loaf of Italian bread. (with gobs of butter)
