SNICKERDOODLES
1 tbsp. sugar
1 tbsp. ground cinnamon
1 cup shortening
1½ cups sugar
2 eggs
1 tsp. vanilla extract
2¾ cups flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cream of tartar
Combine 1 tbsp. sugar and cinnamon in a small mixing bowl; set aside. Preheat oven to 400º.
Cream shortening in a medium mixing bowl; gradually add 1½ cups sugar, beating well. Add eggs; beat well. Stir in vanilla.
3. Combine flour, baking soda, salt and cream of tartar in a medium mixing bowl. Add to creamed mixture; mix well.
4. Shape dough into 1½-inch balls, and roll in reserved cinnamon-sugar mixture. Place 2 inches apart on a lightly greased cookie sheet. Bake at 400º for 8 minutes or until lightly browned. Remove to wire racks to cool. Yield: about 2½ dozen.
