Good Hors d'oeuvres And Easy To Prepare

          "Shrimp Spread"
          Great on Ritz or any crackers!
          2 cans shrimp--drained
          1-8oz pkg cream cheese--softened
          1/4 lb margarine--melted
          1/2 cup mayonaise or Miracle Whip
          grated onion--to taste
          2 Tbsp. lemon juice
          Dash Worchestershire sauce
          Put all ingredients into blender, whirr and chill



          "Open Face Sandwiches"
          Delicious & Easy!
          1 can Spam
          4 hard boiled eggs
          1/4# Velveeta cheese
          1 cup salad dressing
          little green pepper and onion chopped, varies on tastes
          MIX all of the above together
          SPREAD mixture on sliced open hamburger buns
          PLACE on cookie sheets and put under broiler till cheese melts
          Serve hot!


          "Broccoli Salad"
          Good side dish
          1-1/2 bunches broccoli, washed & raw
          1 cup raisins
          1/2 cup onion minced or diced
          1 cup salted cashews
          1 lb fried crisy bacon, crumbled
          1/4 cup sugar
          1-1/2 tbsp. white vinegar
          Toss all ingredients and serve cold


          "Miniature Chicken Drumsticks"
          Nice Hors d'oeuvre
          3 lbs chicken wings
          6 tbsp butter or margarine
          1 cup finely crushed Ritz crackers
          2 tbsp Sesame seeds (optional)
          1 tsp. paprika
          1/2 tsp onion salt
          1/2 tsp salt
          cut chicken wings, at joints, into 3 parts. Discard tips
          melt butter and set aside
          mix remaining ingredients together
          dip chicken into melted butter/margarine
          roll in crushed cracker crumbs
          place on cookie sheeet and bake at 350 degrees till tender
          about 40 mins or to your liking



          "Sauerkraut Sausage"
          Great on Ritz or any crackers!
          1 ring of any kind of your favorite kielbasa sausage, low cal or otherwise
          Slice and fry in electric skillet
          add 1 can of drained sauerkraut and continue
          to simmer at low heat until juices are pretty well gone
          Serve on crackers



          "Chicken Ham Delight"
          Great on Ritz or any crackers!
          1 cup cooked chicken, cubed
          1 cup cooked ham, cubed
          1/2 c green olives
          1/2 cup mayonaise
          Put 1/2 of all ingredients in blender and run on high 30 seconds
          Add rest of the ingredients w/blender running (through top hole)
          stopping to push down ingredients, until smooth
          Serve on crackers



          "Parmesan Onion Canape"
          These are just really good!
          1 cup mayonaise
          1 cup Parmesan cheese
          1/2 cup finely chopped onion
          1 tbsp. milk
          1 loaf sliced cocktail rye bread (toasted)
          Mix first 4 ingredients. Spread on toast and broil 4" from heat
          until bubbly or lightly browned.



          "Marvelous Potato Salad"
          Just takes a few more minutes! Wonderful Recipe
          "chip up" (salt) and Boil about 5 med. sized
          potatoes and set them aside
          THEN... slightly beat 2 eggs and add
          1/4 cup white vinegar and 1/4 cup water mixed
          1 tbsp flour
          1/2 cup sugar....
          (Should mix flour with sugar before adding) (helps so it doesn't lump)
          Cook this all together until it thickens
          ADD: 1 cup mayonaise (not salad dressing)
          little mustard and salt to taste.
          ADD: few slices of radishes and thinly sliced cukes
          a little minced onion...
          1 or 2 hard boiled eggs sliced on top for garnish



          "Applesauce Meatballs"
          It keeps 'em guessing "What's in here?"!
          2 slices bread
          1 lb lean ground beef
          1 egg
          1 cup unsweetened applesauce
          1 tbsp instance minced onion
          1 tsp salt
          1/8 tsp pepper
          5 tbsp catsup 3/4's Cup water
          Moisten bread with the water and squeeze out well
          crumble bread into large bowl with ground beef,
          egg, applesauce, onion, salt and pepper. Mix lightly
          Roll in balls and brown in a little margarine until done
          and serve
