In The Winery At Phoenix

Things are almost as busy inside the winery as they are outside at this point. We are preparing for a bottling day later this month. The wines to be bottled are going to be racked from barrel to the bottling tanks and a small amount of Sulfiting agent is going to be added help stabilize the wine for bottling. We do not filter our red wines as we are trying to deliver the maximum character of the wine into your glass. After the bottling we will finish the winery addition, which will take us most of the spring and summer to complete. Concurrent with these projects we will have 1 or possibly 2 more bottling days during the next few months. A busy time indeed!
