Chicken Picante
1/2 cup salsa sauce 2 Tblsp butter
1/4 cup Dijon mustard 6 Tblsp plain yogurt
2 Tblsp lime juice 1 lime, peeled and sectioned
6 skinned chicken breasts Chopped cilantro
Combine salsa, mustard and lime juice. Add chicken, turning to coat; marinate 30 minutes. Melt butter over medium heat until foamy. Remove chicken from marinade and place in skillet. Cook chicken, turning once, about 10 minutes until browned. Add marinade and cook until chicken is cooked and marinade is slightly reduced, about 5 minutes. Remove chicken to platter. Raise heat; boil marinade 1 minute. Pour over chicken. Place 1 tablespoon yogurt on each chicken breast; top each with lime segment. Sprinkle cilantro over chicken.
