1/2 cup shortening | 1 1/2 cups flour | |||
1 cup sugar | 1/2 tsp salt | |||
2 eggs | 1 tsp baking powder | |||
Grated rind of 1 lemon | 1/2 cup milk |
Juice of 1/2 lemon | 1/4 cup sugar |
Cream shortening; beat in sugar gradually. Add eggs and beat well; stir in rind. Blend in dry ingredients and add alternately with milk, mixing well. Bake in a greased loaf pan in a 350 degree oven, 50-60 minutes. Mix glaze and spread over top immediately. Let cool 10 minutes. Remove from pan and cool completely before slicing. |
